Our take

NEIGE is the classic Penicillium candidum strain many traditional brie and camembert recipes name. Slightly cheaper than SAM3 in the 2-dose size, same job: a white, even rind and a creamy breakdown underneath.

Doses are the retailer's or manufacturer's stated figures for this product. Culture strength is measured in activity units (DCU/CXU), not weight alone — a teaspoon of one brand is not a teaspoon of another. When in doubt, follow the packet.
